1. Preheat oven to 350°F and line a 9x9 inch pan with aluminum foil. Spray foil with cooking spray and set aside until ready to use.
2. In a large bowl, combine coconut flour, cocoa powder and salt and whisk until well combined.
3. In a medium bowl, whisk eggs until smooth, then whisk in sugar. Add in oil and vanilla and whisk until well combined.
4. Gently whisk coconut flour mixture into egg mixture until no lumps remain, being careful not to overmix.
5. Pour brownie batter into the prepared pan. If peanut butter is stiff, microwave for 15-30 seconds so that it is a little more pourable, then then drop tablespoons of peanut butter over the top of the brownie mixture. Use a toothpick or a butter knife to gently swirl the peanut butter into the brownie mixture.
6. Bake brownies until a toothpick inserted in the center comes out clean, approximately 30-40 mins. Let cool in pan before cutting into bars and serving.
